SURIMI

“Surimi” is a project about fish in the age of mass commerce.

Fish has always been both nourishment and a product, but how is it handled today in Italy’s largest market?

The fish is portrayed in its relationship with humans: it is transported, moved, cut, and processed to the point where it gets a new form.

This is why it becomes “Surimi,” from the Japanese meaning “minced fish,” an invention refined in the 1970s. “Surimi” is considered fish, but it does not exist in nature: it is a fish created by humans.
